Method

Preparing the Sardines

    Clean the Sardines

    Remove the heads and guts from the sardines, rinse them under cold water, and pat dry with paper towels.

    Stuff the Sardines

    Carefully open the sardines and place a slice of Provolone cheese inside each one. Close the sardines gently.

    Prepare the Breading

    Set up a breading station: one plate with flour, one bowl with the beaten egg, and another plate with breadcrumbs mixed with salt and pepper.

    Coat the Sardines

    Dredge each stuffed sardine in flour, then dip in egg, and finally coat with breadcrumbs. Ensure they are well-coated.

Frying the Sardines

    Heat the Oil

    In a large frying pan, heat the olive oil over medium-high heat until hot.

    Fry the Sardines

    Carefully add the breaded sardines to the hot oil, frying in batches if necessary. Cook for about 3-4 minutes on each side or until golden brown and crispy.

    Drain the Sardines

    Once cooked, remove the sardines from the pan and place them on a plate lined with paper towels to absorb excess oil.

Preparing Carpione Gel

    Prepare the Gelatin

    In a small bowl, sprinkle gelatin powder over water and let it sit for 5 minutes to bloom.

    Cook the Carpione Mixture

    In a saucepan, combine the chopped red bell pepper, white wine vinegar, sugar, and salt. Bring to a boil and simmer for 5 minutes.

    Combine with Gelatin

    Remove the mixture from heat, stir in the bloomed gelatin until fully dissolved, and pour into a shallow dish. Refrigerate until set, about 2 hours.

Making Ginger Lime Mayonnaise

    Mix Ingredients

    In a bowl, combine mayonnaise, grated ginger, lime juice, and salt. Mix well until smooth.

    Adjust Seasoning

    Taste and adjust with more salt if needed. Refrigerate until ready to serve.

    Arrange the crispy sardines on a serving platter, accompanied by a small bowl of ginger lime mayonnaise and the carpione gel.
