Method

Preparation

  1. 1

    Prepare the Melon

Cut the cantaloupe melon in half, scoop out the seeds, and slice the flesh into thin wedges.

  2. 2

    Prepare the Prosciutto

Lay the slices of Prosciutto di Parma on a serving platter, slightly overlapping them.

Port Wine Reduction

  1. 3

    Cook the Port Wine

In a small saucepan, pour the port wine and heat over medium heat until it begins to simmer.

  2. 4

    Reduce the Port Wine

Allow the port wine to simmer for about 10-15 minutes, or until it has reduced by half and has thickened slightly. Remove from heat and let cool.

Assembly

  1. 5

    Combine Ingredients

Arrange the melon wedges on top of the prosciutto slices on the platter.

  2. 6

    Drizzle with Reduction

Once the port wine reduction has cooled, drizzle it over the prosciutto and melon arrangement.

  3. 7

    Garnish

Finish by scattering fresh basil leaves over the top and sprinkling black pepper to taste.
