    Prepare the Bacalhau

    Soak the salted cod in water for at least 24 hours, changing the water several times. After soaking, boil the cod for about 10-15 minutes until cooked through. Drain, remove bones and skin, and flake the fish.

    Make the Cheese and Cornbread Crust

    In a bowl, mix the flaked bacalhau with crumbled queijo da serra and broa. Add minced garlic, chopped onion, black pepper, and paprika. Combine well to form a crust mixture.

    Bake the Dish

    Preheat the oven to 200°C (390°F). Spread the bacalhau mixture on a baking dish and drizzle with olive oil. Bake for 20-25 minutes or until the top is golden brown and crispy.

    Garnish

    Once baked, sprinkle with freshly chopped parsley before serving.

Chickpea Mash

    Prepare the Chickpeas

    In a pot, combine the cooked chickpeas and water. Heat over medium heat until warmed through, about 5 minutes.

    Mash the Chickpeas

    Use a potato masher or fork to mash the chickpeas until smooth. Add lemon juice and salt to taste, mixing until well combined.

    Sauté the Cabbage

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped cabbage and sauté for about 5-7 minutes until tender. Season with salt to taste.
