Method

Preparation of the Octopus

    Clean and Prepare the Octopus

    Rinse the octopus under cold water and remove any beak and innards. Pat dry with paper towels.

    Cook the Octopus

    In a large pot, bring water to a boil. Add the octopus and reduce to a simmer. Cook for approximately 45-60 minutes or until tender. Once cooked, remove from pot and let cool.

Preparation of the Sauce

    Heat the Olive Oil

    In a large skillet, heat 4 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

    Add Tomatoes and Spices

    Stir in the diced canned tomatoes, crushed red pepper flakes, salt, and black pepper. Allow to simmer for about 15 minutes, stirring occasionally.

    Add Fresh Basil

    Tear the fresh basil leaves and add them to the sauce just before serving.

Preparation of the Vegetables

    Grill the Baby Zucchini

    Slice the baby zucchini in half lengthwise and grill them on a grill pan over medium-high heat for about 3-4 minutes on each side until tender and grill marks appear. Set aside.

    Blanch the Green Beans

    In a pot of boiling salted water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.

Assembly and Serving

    Combine Ingredients

    Slice the cooked octopus into bite-sized pieces and add it to the skillet with the arrabbiata sauce. Mix well to coat the octopus with the sauce.

    On a plate, arrange the grilled baby zucchini and blanched green beans. Top with the octopus and sauce mixture. Serve hot.
