Preparation of Peppers

    Roasting the Peppers

    Preheat your oven to 400°F (200°C). Cut the tops off the red bell peppers and remove the seeds. Place them upright on a baking sheet.

    In a mixing bowl, combine capers, chopped olives, anchovy fillets, minced garlic, and chopped parsley. Drizzle with olive oil and mix well. Season with salt and black pepper to taste.

    Stuffing the Peppers

    Fill each red bell pepper with the stuffing mixture, pressing down gently to pack it in. Place the stuffed peppers back on the baking sheet.

Cooking the Fish

    In a skillet over medium-high heat, add a drizzle of olive oil. Season the fish fillets with salt and black pepper. Once the oil is hot, add the fish fillets and sear for about 3-4 minutes on each side until golden and cooked through.

Roasting the Stuffed Peppers

    While the fish is cooking, place the stuffed peppers in the oven and roast for 20-25 minutes until they are tender and slightly charred.

    On a serving plate, place the seared fish fillet. Top with a stuffed red bell pepper. Garnish with fresh parsley and serve with lemon wedges on the side.
