Pasta Preparation

    Make the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and crack in the eggs. Using a fork, gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Pasta

    After resting, divide the dough into four portions. Roll each portion out with a pasta machine or a rolling pin until very thin. Cut into sheets that will fit your baking dish.

    Prepare the Vegetables

    Finely chop the onion, carrot, celery, and garlic.

    Cook the Ragù

    In a large skillet, heat the olive oil over medium heat. Add the chopped vegetables and sauté until soft, about 5 minutes. Add the ground beef and cook until browned. Stir in the canned tomatoes, red wine, salt, pepper, and Italian seasoning. Let simmer for at least 30 minutes, stirring occasionally. Add fresh basil before removing from heat.

Béchamel Sauce Preparation

    Make the Béchamel

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually add the milk while whisking to avoid lumps. Cook until the sauce thickens, about 10 minutes. Season with salt and nutmeg.

Assembly

    Layer the Lasagna

    Preheat your oven to 180°C (350°F). In a baking dish, spread a layer of ragù, then a layer of pasta sheets, followed by a layer of béchamel. Repeat these layers until all ingredients are used, finishing with béchamel on top. Sprinkle with grated Parmesan cheese.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until golden and bubbly. Let it cool for a few minutes before serving, garnished with fresh basil leaves.
