Pasta Preparation

    Make the Pasta Dough

    In a bowl, mix flour and salt. Make a well in the center and add eggs. Gradually mix flour into the eggs until a dough forms. Knead the dough on a floured surface until smooth, about 10 minutes. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece thinly, using a pasta machine or a rolling pin. Cut into lasagna sheets.

Ragù Preparation

    Sauté the Vegetables

    In a large pan, heat olive oil over medium heat. Add chopped onion, carrot, celery, and minced garlic. Sauté until soft, about 5-7 minutes.

    Cook the Meat

    Add ground beef to the pan. Cook until browned, about 10 minutes. Drain excess fat if necessary.

    Add Tomato Ingredients

    Stir in the tomato paste and cook for 2 minutes. Add crushed tomatoes and red wine. Season with salt, pepper, and basil leaves. Let simmer for at least 30 minutes, stirring occasionally.

    Make the Roux

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 2 minutes, stirring constantly.

    Add Milk

    Gradually whisk in milk, ensuring no lumps form. Cook until it thickens, about 10 minutes. Season with salt and nutmeg.

    Incorporate Cheese

    Remove from heat and stir in grated Parmesan cheese until melted and smooth.

Assembly and Baking

    Layer the Lasagna

    In a large baking dish, spread a layer of ragù at the bottom. Place a layer of pasta sheets, followed by béchamel and a sprinkle of mozzarella. Repeat layers until all ingredients are used, finishing with béchamel and mozzarella on top.

    Bake

    Preheat the oven to 180°C (350°F). Bake the lasagna for 45-50 minutes, until golden and bubbly.

    Serve

    Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil leaves before serving.
