Method

Gnocchi Preparation

    Cook the Potatoes

    Boil the potatoes in salted water for about 20 minutes or until tender. Drain and allow to cool slightly.

    Make the Dough

    Peel the potatoes and mash them until smooth. Combine the mashed potatoes with flour, egg, and salt in a bowl. Mix until a dough forms, then knead gently on a floured surface until smooth.

    Shape the Gnocchi

    Divide the dough into small pieces and roll each piece into a long rope about 1 cm thick. Cut into bite-sized pieces and press with a fork to create ridges.

Pesto Sauce Preparation

    Blend the Ingredients

    In a food processor, combine basil leaves, pine nuts, grated Parmesan, garlic, olive oil, and salt. Blend until smooth, adding more olive oil if necessary to reach desired consistency.

Shrimp & Sun-dried Tomatoes Preparation

    Cook the Shrimp

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp and cook until they turn pink, about 3-4 minutes.

    Add Sun-dried Tomatoes

    Stir in the chopped sun-dried tomatoes and black pepper, cooking for an additional 2 minutes until heated through.

Assembly

    Combine Everything

    In a large pot of boiling salted water, cook the gnocchi until they float to the surface, about 2-3 minutes. Drain and toss with the pesto sauce, shrimp, and sun-dried tomatoes.

    Plate the gnocchi and garnish with additional grated Parmesan if desired. Serve hot.
