Prepare Tempura Batter

    Mix Dry Ingredients

    In a bowl, combine the all-purpose flour, cornstarch, and salt. Whisk together until well blended.

    Add Wet Ingredients

    In a separate bowl, whisk the egg and ice water together. Pour this mixture into the dry ingredients and stir gently until combined. The batter should be lumpy; do not overmix.

Prepare Shrimp

    Season Shrimp

    Pat the shrimp dry with paper towels. Season with salt and black pepper on both sides.

Make Lemon Mayonnaise

    Combine Ingredients

    In a small bowl, mix the mayonnaise, fresh lemon juice, lemon zest, and salt. Whisk until smooth and set aside.

Fry Shrimp

    Heat Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter and Fry

    Dip each shrimp into the tempura batter, allowing excess to drip off. Carefully place the shrimp into the hot oil, frying in batches if necessary. Fry for about 2-3 minutes or until golden brown and crispy, turning once.

    Drain and Serve

    Remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with the lemon mayonnaise on the side.
