Grilled Sea Bass

Grilled Sea Bass

    Prepare the Sea Bass

    Pat the sea bass fillets dry with paper towels. In a bowl, mix olive oil, salt, black pepper, and lemon juice. Coat the fillets in this marinade and let them sit for at least 20 minutes.

    Grill the Sea Bass

    Preheat the grill to medium-high heat. Grill the sea bass fillets for about 4-5 minutes on each side or until they are cooked through and have grill marks. Remove from grill and keep warm.

Citrus Risotto

    Sauté the Aromatics

    In a large saucepan, heat 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Toast the Rice

    Add the Arborio rice to the saucepan and stir well to coat with the butter. Cook for about 2 minutes until the rice is slightly translucent.

    Deglaze with Wine

    Pour in the white wine and stir until it is mostly absorbed by the rice.

    Add Broth Gradually

    Begin adding the broth, one ladle at a time, stirring constantly. Allow each ladleful to be absorbed before adding the next. This process should take about 18-20 minutes.

    Finish the Risotto

    When the rice is creamy and al dente, stir in the lemon zest, orange zest, Parmesan cheese, and remaining butter. Season with salt and black pepper to taste.

Beurre Blanc Sauce

    Prepare the Sauce Base

    In a small saucepan, combine the chopped shallots and white wine. Bring to a simmer and reduce until only a couple of tablespoons of liquid remains.

    Incorporate the Butter

    Reduce the heat to low and whisk in the cold, cubed butter, a few pieces at a time, until the sauce is emulsified and creamy. Add lemon juice, salt, and pepper to taste.
