For the Codfish

    Prepare the Codfish

    Preheat your oven to 400°F (200°C). In a bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper. Add the codfish fillets to the bowl, coating them well with the marinade. Allow them to marinate for 15 minutes.

    Bake the Codfish

    Place the marinated codfish on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

For the Serra Cheese and Corn Bread Crust

    Prepare the Cornbread Mixture

    In a bowl, combine the cornbread mix, grated Serra cheese, milk, and egg. Stir until just combined. Do not overmix.

    Apply the Cornbread Crust

    Remove the codfish from the oven after 15-20 minutes. Spread the cornbread mixture evenly over the top of each codfish fillet. Return to the oven and bake for an additional 10-12 minutes, or until the crust is golden brown.

    Prepare the Cabbage

    In a skillet, heat olive oil over medium heat. Add the shredded cabbage and sauté for about 5-7 minutes until it is tender. Season with salt and black pepper to taste. Remove from heat and keep warm.

    Mash the Chickpeas

    In a separate bowl, mash the drained chickpeas with a fork or potato masher until they reach your desired consistency. Season with salt and black pepper. You can add a splash of olive oil for creaminess if desired.

    Assemble the Dish

    To serve, place a generous scoop of mashed chickpeas on each plate, top with sautéed cabbage, and finally place the baked codfish with the cornbread crust on top. Enjoy!
