    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Filling

    In a bowl, combine the goat cheese, chopped pistachios, maple syrup, black pepper, and salt. Mix well until all ingredients are fully incorporated.

    Roll Out the Pastry

    On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thickness. Cut each sheet into squares or circles, depending on your preference.

    Fill the Pastry

    Place a spoonful of the cheese filling in the center of each pastry square or circle. Be careful not to overfill.

    Seal the Pastry

    Fold the pastry over the filling to create a pocket. Use a fork to press the edges together and seal securely.

Baking

    Place the filled pastries on a baking sheet lined with parchment paper. Brush the tops with a little melted butter or an egg wash for a golden finish.
