Fresh Pasta Preparation

Make the Pasta Dough
In a large bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface. Knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Brown the Beef
Add ground beef to the pot. Cook until browned, breaking it apart with a wooden spoon, about 8-10 minutes.

Add Tomatoes and Wine
Stir in crushed tomatoes, red wine, oregano, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for at least 1 hour, stirring occasionally.

Finish the Sauce
Stir in chopped basil and half of the grated Parmesan cheese. Set aside.

Make the Roux
Once melted, add the all-purpose flour. Whisk continuously for about 2 minutes until the mixture is golden brown.

Add Milk
Gradually pour in the milk while whisking to prevent lumps. Continue whisking until the sauce thickens, about 5-7 minutes.

Season the Sauce
Add nutmeg and salt. Remove from heat and set aside.
Assembling the Lasagna

Roll Out the Pasta
On a floured surface, roll out the rested pasta dough into thin sheets. Cut the sheets into rectangles that will fit your baking dish.

Layer the Ingredients
In a greased baking dish, spread a layer of Bolognese sauce, then a layer of pasta sheets, followed by a layer of béchamel sauce. Repeat the layers, finishing with béchamel on top.

Top with Cheese
Sprinkle the remaining Parmesan cheese on top of the final béchamel layer.

Bake the Lasagna
Preheat the oven to 375°F (190°C). Bake the lasagna for 30-40 minutes until bubbly and golden on top. Let it rest for 10 minutes before serving.
