Parsnip and Vanilla Purée

Method

Steak Preparation

    Season the Steak

    Pat the beef steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Add the seasoned steaks to the hot skillet. Sear for about 3-4 minutes on one side without moving them.

    Add Butter and Thyme

    Flip the steaks and add butter and fresh thyme to the pan. Cook for an additional 3-4 minutes, basting the steaks with melted butter.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Parsnip and Vanilla Purée Preparation

    Prepare the Parsnips

    Peel and chop the parsnips into small pieces for even cooking.

    Cook the Parsnips

    In a pot, cover the parsnips with water and add a pinch of salt. Bring to a boil and simmer until the parsnips are tender, about 15-20 minutes.

    Add Vanilla

    Split the vanilla bean lengthwise and scrape the seeds into the pot with the parsnips. Add the whole vanilla pod as well.

    Blend the Purée

    Drain the parsnips and discard the vanilla pod. Add the parsnips, heavy cream, and butter to a blender. Blend until smooth and creamy. Season with salt to taste.
