Assemble Lollipops
Thread each shrimp onto a skewer, piercing through the tail and the head to create a lollipop effect. Place skewers on a baking sheet.

Cook Octopus
In a large pot, bring 2 cups of water to a boil. Add the cleaned octopus and reduce the heat to a simmer. Cook for about 45 minutes or until tender.

Prepare Purée
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add smoked paprika, salt, and black pepper. Stir for 1 minute.

Blend Purée
Remove the skillet from heat. Transfer the mixture to a blender, add lemon juice, and blend until smooth. Adjust seasoning if necessary.

Serve
Slice the cooked octopus into bite-sized pieces. Serve on a plate drizzled with the smoked paprika purée and garnished with chopped parsley.

Prepare Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface.

Cut the puff pastry into squares. In a bowl, mix together the cheddar and parmesan cheeses, salt, and black pepper. Place a spoonful of cheese mixture in the center of each pastry square.

Place the prepared pastries on a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden brown and puffed.
