Bourbon Production

    Mashing

    Combine the corn, wheat, and barley in a large mash tun. Add distilled water at a temperature of 150°F (65°C) and allow the grains to mash for about 1-2 hours.

    Fermentation

    Once mashing is complete, cool the mash to around 70°F (21°C) and add the yeast. Allow the mixture to ferment for about 5-7 days until bubbles cease.

    Distillation

    Transfer the fermented mash to a still and distill the liquid twice to achieve a higher alcohol content. Collect the 'heart' portion of the distillate.

Aging Process

    Filling Barrels

    Fill the new charred oak barrels with the distilled bourbon. Seal the barrels tightly.

    Aging

    Store the barrels in a climate-controlled warehouse for 12 years to allow the bourbon to mature and develop its flavor profile.

    Bottling

    After 12 years, extract the bourbon from the barrels, filter if necessary, and bottle the bourbon for sale.
