1. Prepare the Ingredients

Start by dicing the country ham, onion, and jalapeños. Set aside in separate bowls for easy access.

2. Beat the Eggs

In a large bowl, crack the eggs. Add salt and black pepper. Whisk together until well combined and slightly frothy.

3. Cook the Vegetables

In a large non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and jalapeños. Sauté for about 3-4 minutes until the onion is translucent and softened.

4. Add the Ham

Stir in the diced country ham with the onions and jalapeños. Cook for an additional 2 minutes until the ham is heated through.

Pour the beaten eggs over the sautéed mixture in the skillet. Cook without stirring for about 2-3 minutes, allowing the eggs to set on the bottom.

6. Add the Cheese

Once the eggs start to firm up but are still slightly runny on top, sprinkle the shredded cheddar cheese evenly over the omelet.

7. Fold the Omelet

Using a spatula, carefully fold the omelet in half. Cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.
