Preparation

1. Prepare the Ingredients

If using, chop the onion, tomato, and bell pepper into small pieces. Rinse the spinach under cold water and pat dry with a paper towel.

Cooking the Omelette

2. Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion (if using) and sauté until translucent, about 3-4 minutes. Add the chopped tomato and bell pepper (if using) and cook for an additional 2 minutes. Add the spinach and cook until wilted, about 2-3 minutes. Remove the vegetables from the skillet and set aside.

3. Whisk the Eggs

In a bowl, crack the 4 large eggs and add salt and black pepper. Whisk together until the mixture is uniform in color.

4. Cook the Omelette

In the same skillet, add the remaining tablespoon of olive oil and heat over medium-low heat. Pour the whisked eggs into the skillet, tilting the pan to ensure even coverage. Allow the eggs to cook without stirring for about 3-4 minutes until the edges start to set.

5. Add Filling

Once the omelette has set, sprinkle the sautéed vegetable mixture evenly over one half of the omelette. Crumble the feta cheese on top of the vegetables.

6. Fold and Finish Cooking

Carefully fold the other half of the omelette over the filling using a spatula. Cook for another 2-3 minutes until the cheese begins to melt and the inside is fully cooked.

Slide the omelette onto a plate and cut in half if desired. Serve warm and enjoy!
