Preparation of Potatoes

Baking the Potatoes
Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly and poke several holes in each potato with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.

Finely chop the scallions, setting aside some of the green tops for garnish.

Stuffing the Potatoes
Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut a lengthwise slit in each potato and gently scoop out some of the flesh, leaving a little to hold the shape. In a bowl, mix the scooped potato flesh with sour cream, half of the cheddar cheese, cooked bacon, chopped scallions, salt, and pepper until well combined.

Adding Meat and Cheese
Spoon the mixture back into each potato. Top with the remaining cheddar cheese and your choice of beef brisket or pulled pork.
Baking the Stuffed Potatoes

Final Bake
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

Garnishing and Serving
Remove from the oven and let cool slightly. Garnish with reserved scallion tops. Serve warm, and enjoy your loaded stuffed baked potatoes!
