Preparation of Mornay Sauce

Make the Roux

In a medium saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk continuously for about 2 minutes until the mixture is bubbly and a light golden color.

Add Milk

Gradually whisk in the milk, ensuring no lumps form. Continue to whisk until the sauce thickens and comes to a simmer, about 5-7 minutes.

Add Cheese and Seasoning

Remove from heat and stir in the shredded Gruyère cheese until melted. Season with paprika, salt, and black pepper. Set aside.

Prepare the Texas Toast

Toast the slices of Texas toast until golden brown. You can use a toaster or a grill to achieve this.

Layer Ingredients

On each slice of toasted Texas toast, layer the sliced roasted turkey, followed by the sliced tomatoes and mushrooms.

Add Mornay Sauce

Generously pour the prepared Mornay sauce over the layered turkey, tomatoes, and mushrooms on each toast.

In a non-stick skillet, fry the eggs sunny-side up. Cook until the whites are set but the yolks remain runny, about 3-4 minutes.

Place one sunny-side-up egg on top of each toast. Sprinkle crumbled bacon and chopped parsley over the top for garnish.
