    Prepare the Ingredients

    Chop the onion, bell pepper, celery, and garlic. Cut the chicken breast into bite-sized pieces and slice the andouille sausage.

    Cook the Proteins

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced andouille sausage and cook for about 5 minutes until browned. Add the chicken pieces and cook until no longer pink, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped onion, bell pepper, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

    Incorporate Rice and Liquids

    Add the rice, diced tomatoes (with juices), chicken broth, and Cajun seasoning to the pot. Stir to combine, ensuring the rice is submerged in the liquid.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, or until the rice is tender and has absorbed most of the liquid.

    Add Shrimp

    After the rice is cooked, gently fold in the shrimp. Cover and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

Serving

    Garnish and Serve

    Remove from heat and let it sit for a few minutes. Garnish with sliced green onions before serving. Enjoy your jambalaya!
