Roasting Vegetables

Preheat the Oven

Preheat your oven to 400°F (200°C) while you prepare the vegetables.

Prepare the Vegetables

Chop the bell peppers, red onion, zucchini, and mushrooms into bite-sized pieces.

Season the Vegetables

In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, garlic powder, and paprika. Toss to coat evenly.

Roast the Vegetables

Spread the seasoned vegetables on a baking sheet and roast them in the preheated oven for 20-25 minutes, or until they are tender and slightly browned.

Heat the Pan

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Cook Hash Browns

Add the frozen hash browns to the skillet, season with salt and pepper, and cook for about 5-7 minutes on each side, or until golden and crispy. Set aside.

Fry the Eggs

In the same skillet used for the hash browns, reduce the heat to low and crack the eggs into the pan. Cook until the whites are set but the yolks are still runny, about 2-3 minutes.

On a large plate, layer the crispy hash browns, followed by the roasted vegetable mixture.

Top the roasted vegetables with the sunny side-up eggs and sprinkle with crumbled feta cheese. Garnish with fresh parsley if desired.
