Method

Preparing the Salmon

  1. 1

    Marinating the Salmon

In a small bowl, mix together olive oil, salt, and black pepper. Brush the mixture over both sides of the salmon fillets. Allow the salmon to marinate for at least 15 minutes.

  2. 2

    Grilling the Salmon

Preheat your grill to medium-high heat. Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 3

    Prepping and Grilling the Vegetables

While the salmon is grilling, prepare the seasonal vegetables. Trim the asparagus, slice the bell peppers into strips, and cut the zucchini into rounds. Toss the vegetables with a little olive oil, salt, and pepper. Grill the vegetables alongside the salmon for about 5-7 minutes or until tender.

Making the Lemon Butter Sauce

  1. 4

    Preparing the Sauce

In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the lemon juice and chopped parsley. Cook for an additional 1-2 minutes, then remove from heat.

Serving

  1. 5

    Plating the Dish

On a serving plate, place a portion of grilled salmon alongside the grilled seasonal vegetables. Drizzle the lemon butter sauce over the salmon and vegetables before serving.
