Method

Pork Chops Preparation

    Marinate the Pork Chops

    In a bowl, add the pork loin chops and cover them with buttermilk. Let them marinate for at least 1 hour in the refrigerator, or overnight for best results.

    Prepare the Breading

    In a shallow dish, mix the flour, cornmeal, salt, black pepper, and garlic powder. Set aside.

    Bread the Pork Chops

    Remove the pork chops from the buttermilk, allowing the excess to drip off. Dredge each chop in the flour mixture, ensuring an even coating. Set aside on a plate.

    Fry the Pork Chops

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded pork chops. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Sausage Gravy Preparation

    Cook the Sausage

    In a medium skillet over medium heat, cook the ground sausage until browned and crumbly. Drain excess fat if necessary.

    Make the Gravy

    Sprinkle the flour over the cooked sausage and stir to combine. Gradually add the milk, stirring continuously until the gravy thickens. Season with salt, black pepper, and red pepper flakes to taste.

Mashed Potatoes Preparation

    Cook the Potatoes

    Peel and quarter the red skin potatoes. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper, and mash until smooth and creamy.

    Garnish with Scallions

    Finely chop the scallions and stir them into the mashed potatoes before serving.
