Prepare the Shrimp
In a medium bowl, combine the buttermilk and Doc's spice blend. Add the peeled and deveined shrimp and let them marinate for at least 30 minutes.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornmeal, salt, black pepper, paprika, and garlic powder until well combined.

Heat the Oil
In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer to ensure the oil is at the right temperature.

Coat the Shrimp
Once the shrimp have marinated, remove them from the buttermilk, allowing any excess to drip off. Dredge each shrimp in the flour and cornmeal mixture, ensuring they are evenly coated.

Fry the Shrimp
Carefully place the coated shrimp into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Arrange the fried shrimp on a serving platter. Serve with lemon wedges and a side of Doc's Remoulade for dipping.
