Fried Green Tomatoes

    Prepare the Tomatoes

    Wash the green tomatoes and slice them into 1/2-inch thick slices. Set aside.

    Set Up Breading Station

    In three separate shallow bowls, place flour mixed with salt, black pepper, and cayenne pepper in one, whisk the eggs and milk in the second, and combine cornmeal and panko breadcrumbs in the third.

    Bread the Tomatoes

    Dip each slice of tomato first into the flour mixture, coating both sides, then into the egg mixture, and finally into the cornmeal and panko mixture, ensuring they are well coated.

    Heat the Oil

    In a large skillet, heat vegetable oil over medium heat until shimmering.

    Fry the Tomatoes

    Carefully place the breaded tomato slices into the hot oil, frying in batches if necessary. Cook for 3-4 minutes on each side or until golden brown and crispy.

    Drain and Sprinkle

    Once fried, remove the tomatoes from the skillet and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt if desired.

    Chop fresh chives and sprinkle over the fried green tomatoes for garnish.

Doc's Remoulade

    Mix the Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, capers, hot sauce, garlic powder, paprika, lemon juice, salt, and black pepper.

    Stir Well

    Stir the mixture until all ingredients are well combined and smooth.

    Chill and Serve

    Cover the remoulade and refrigerate for at least 30 minutes before serving.
