Doc's Remoulade Sauce

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and thick.

Heat the Oil
In a deep frying pan or deep fryer, heat the vegetable oil to 350°F (175°C). Use enough oil to fully submerge the cod fillets.

Fry the Cod
Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into thick fries. Soak them in cold water for 30 minutes to remove excess starch.

Fry the Potatoes
Drain and pat the potatoes dry. In another deep frying pan or fryer, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches for about 5-6 minutes until golden and crispy. Remove and drain on paper towels, then season with salt.

Mix the Sauce
In a bowl, combine the mayonnaise, Dijon mustard, chopped capers, chopped parsley, lemon juice, and hot sauce (if using). Mix well until all ingredients are combined and smooth.
