Preparing the Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned filet mignon steaks. Sear for 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness.

    Add Flavor

    In the last minute of cooking, add butter, crushed garlic cloves, and a sprig of rosemary to the skillet. Spoon the melted butter over the steaks to baste them for added flavor.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest on a plate for at least 5 minutes before slicing.

Preparing the Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into quarters. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy, adjusting milk for desired consistency.

    Serve

    Spoon the mashed potatoes onto plates and place the sliced filet mignon on top. Drizzle with any leftover pan juices from the skillet.
