Method
Prepare the Burger Patty

Roast the Poblano Pepper
Roast the poblano pepper over an open flame or in the oven until the skin is charred. Place it in a bowl and cover it with plastic wrap for 10 minutes. Once cooled, peel off the skin and dice the pepper.

Mix the Patty Ingredients
In a mixing bowl, combine the cooked black-eyed peas, roasted poblano pepper, smoked tomatoes, breadcrumbs, chopped onion, minced garlic, cumin powder, smoked paprika, salt, and black pepper. Mash the mixture together until well combined but still chunky.

Form the Patties
Divide the mixture into four equal portions and form each portion into a patty shape.

Prepare Chipotle Crema

Mix the Crema Ingredients
In a small bowl, combine sour cream, minced chipotle peppers, lime juice, and salt. Mix well until smooth and set aside.
Assemble the Burger

Toast the Buns
Lightly toast the burger buns on a skillet or in a toaster.

Layer the Ingredients
On the bottom half of each bun, place a lettuce leaf, followed by a slice of tomato, a slice of onion, and pickles. Place the cooked veggie patty on top.

Add the Chipotle Crema
Spread a generous amount of chipotle crema on the top half of the bun, then place it on top of the assembled burger.

Serve
Serve the burgers immediately with your choice of sides.
