Chicken Preparation

    Prepare the Chicken

    Preheat your smoker to 250°F (120°C). Rub the halved chicken with olive oil, salt, black pepper, garlic powder, and paprika. Make sure to coat it evenly for flavor.

    Smoke the Chicken

    Place the chicken halves in the smoker, skin side up. Smoke for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (75°C).

    Baste with Butter

    Melt the stick of butter and baste it over the chicken every 30 minutes while it smokes. This will keep the chicken moist and add flavor.

Bourbon Honey Sauce (for hot fried chicken option)

    Make the Bourbon Honey Sauce

    In a saucepan over medium heat, combine bourbon and honey. Stir until mixed well. Add hot sauce and simmer for 10-15 minutes until slightly thickened. Remove from heat and let cool.

Texas Toast Preparation

    Prepare Texas Toast

    While the chicken is smoking, butter the slices of thick sliced bread on one side. Once the chicken is nearly done, place the bread on the grill or in a skillet over medium heat, butter side down, and toast until golden brown.
