Chicken Marinade

Prepare the Marinade
In a mixing bowl, combine Cajun seasoning, olive oil, and lemon juice. Mix well.

Marinate the Chicken
Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
Cooking the Chicken

Grill or Fry the Chicken
For Cajun-grilled chicken, preheat a grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes per side, or until fully cooked. For Southern fried chicken, heat oil in a frying pan over medium heat and fry chicken for about 5-6 minutes on each side until golden brown and cooked through.

Toast the Brioche Buns
Lightly toast the brioche buns on the grill or in a toaster until golden brown.

Assemble the Sandwich
Spread mayonnaise on the bottom half of each toasted brioche bun. Place a lettuce leaf, followed by the grilled or fried chicken breast, tomato slices, and red onion slices on top. Finish with the top half of the brioche bun.
