Marinate the Chicken
In a bowl, combine the chicken breasts, Cajun seasoning, olive oil, salt, and black pepper. Mix well to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 30 minutes.

Grill or Fry the Chicken
Preheat your grill to medium-high heat or heat oil in a frying pan over medium heat. If grilling, place the marinated chicken on the grill, cooking for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F). If frying, cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from heat and let rest.

Prepare the Vegetables
Wash and dry the lettuce leaves. Slice the tomato into thin rounds and the onion into thin rings.

Assemble the Sandwich
On the bottom half of each brioche bun, spread a generous amount of mayonnaise. Place a lettuce leaf, followed by a grilled or fried chicken breast. Add tomato slices and onion rings on top, then cover with the top half of the bun.
