Method

Crust Preparation

  1. 1

    Make the Pie Crust

In a large mixing bowl, combine the flour and granulated sugar. Add the diced butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Stir in the ice water, one tablespoon at a time, until the dough comes together. Be careful not to overwork the dough.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

After chilling, roll out the dough on a floured surface to fit a 9-inch pie pan. Place the rolled dough in the pan and trim any excess.

Filling Preparation

  1. 5

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 6

    Mix Filling Ingredients

In a large bowl, whisk together the granulated sugar, brown sugar, and eggs until well combined.

  3. 7

    Add Remaining Ingredients

Stir in the vanilla extract, corn syrup, and bourbon. Mix until combined. Fold in the chopped walnuts or pecans and chocolate chips.

  4. 8

    Pour Filling into Crust

Pour the filling mixture into the prepared pie crust.

Baking

  1. 9

    Bake the Pie

Bake in the preheated oven for 50-60 minutes, or until the filling is set and the top is golden brown.

  2. 10

    Cool the Pie

Remove from the oven and let cool at room temperature for at least 1 hour before serving.

Topping Preparation

  1. 11

    Whip the Cream

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.

Serving

  1. 12

    Serve the Pie

Slice the pie and serve warm or at room temperature, topped with a dollop of whipped cream.
