Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, cayenne pepper, and garlic powder. Mix well.

Coat the Calamari
Dip each calamari ring into the buttermilk, allowing excess to drip off, then dredge it in the flour mixture. Make sure each piece is well-coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Fry the coated calamari in batches, without overcrowding the pot, for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Spicy Aioli

Combine Ingredients
In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and sriracha sauce until smooth.

Add salt to taste and stir to combine. Adjust the sriracha for desired spiciness.
