Method
Crust Preparation

Combine Ingredients
In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Make sure it is tightly packed.

Bake
Preheat the oven to 350°F (175°C). Bake the crust for about 8-10 minutes, then remove from the oven and let it cool.
Cheesecake Filling

Mix Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Vanilla
Gradually add the granulated sugar and vanilla extract, mixing until well combined.

Incorporate Sour Cream
Add the sour cream and mix until fully blended into the cheesecake batter.

Add Eggs
Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Pour into Crust
Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

Bake
Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Refrigerate
Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight before serving.

Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Melt Chocolate
Remove from heat and add the chocolate chips, stirring until smooth and fully melted. Allow to cool slightly before serving.
Berry Sauce Preparation

Cook Berries
In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Simmer
Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes. Remove from heat and let cool.
Whipped Cream Preparation

Beat Cream
In a mixing bowl, whip the heavy cream on medium-high speed until soft peaks form.

Add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
