Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, cayenne pepper, and garlic powder. Mix well.

Prepare the Buttermilk Mixture
In another bowl, whisk together the egg and buttermilk until well combined.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Coat the Calamari
Dip each calamari ring into the buttermilk mixture, then dredge it in the flour mixture, ensuring it is fully coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil, frying in batches if necessary. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Sauté the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté for 1-2 minutes until fragrant.

Add Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes to the saucepan. Stir to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Taste the sauce and adjust seasoning as needed.
