    Prepare the Bread

    Slice the baguette or Italian bread into 1/2-inch thick slices. You can cut them diagonally for a larger surface area.

    Grill the Bread

    Preheat your grill or grill pan over medium heat. Lightly brush both sides of the bread slices with olive oil. Grill the slices for about 2-3 minutes on each side, or until they are golden brown and have grill marks. Remove from the grill and set aside.

    Make the Topping

    While the bread is grilling, prepare the tomato topping. Dice the ripe tomatoes into small pieces and place them in a mixing bowl.

    Add Garlic and Basil

    Mince the garlic cloves and add them to the bowl with the diced tomatoes. Tear the fresh basil leaves into smaller pieces and add them to the bowl as well.

    Season the Mixture

    Drizzle 2 tablespoons of extra virgin olive oil and 1 tablespoon of balsamic vinegar over the tomato mixture. Season with salt and black pepper to taste. Gently toss everything together until well combined.

    Assemble the Bruschetta

    Spoon the tomato mixture generously onto the grilled bread slices, ensuring each slice is well topped.

    Serve

    Drizzle the remaining tablespoon of olive oil over the assembled bruschetta if desired. Serve immediately while the bread is still warm.
