    Wash the Greens

    Thoroughly wash the collard greens, kale, and mustard greens under cold water to remove any dirt or sand. Drain and set aside.

    Chop the Greens

    Remove the tough stems from the collard greens and mustard greens. Chop the greens into bite-sized pieces and set aside.

    Prepare the Aromatics

    Peel and mince the garlic cloves. Dice the onion into small pieces.

    In a large pot or Dutch oven, heat the olive oil over medium heat.
