Method

Cooking the Beef Short Rib

    Prepare the Beef Short Rib

    Preheat the oven to 300°F (150°C). Season the beef short rib with salt, black pepper, smoked paprika, and garlic powder on all sides.

    Sear the Short Rib

    In a large oven-safe skillet, heat vegetable oil over medium-high heat. Add the beef short rib and sear for about 3-4 minutes on each side until browned.

    Braise the Short Rib

    Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Braise for about 3 hours or until the meat is tender and easily pulls apart with a fork.

    Add Demi-Glace

    Once the beef is cooked, remove it from the oven and pour the BBQ demi-glace over the beef. Let it rest for 15 minutes before serving.

Preparing the Red Skin Mashed Potatoes

    Boil the Potatoes

    Peel and quarter the red skin potatoes. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes or until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth. Season with additional salt and black pepper to taste.

Preparing the Tobacco Onions

    Slice the Onions

    Thinly slice the large onion into rings.

    Fry the Onions

    In a separate skillet, heat oil over medium heat. Dredge the onion rings in flour, coating them lightly. Fry the onion rings in batches for about 2-3 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fried onions from the skillet and drain on paper towels. Season with salt while still warm.
