Method

Prepare Beef Short Rib

    Season the Rib

    Pat the beef short rib dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Rib

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned short rib and sear for about 3-4 minutes on each side until browned. Remove from heat and set aside.

Make BBQ Demi-Glace

    Combine Ingredients

    In a saucepan, combine beef stock, BBQ sauce, and red wine. Bring to a simmer over medium heat.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to create a slurry. Gradually add this to the saucepan, stirring constantly until the sauce thickens. Reduce heat and keep warm.

Prepare Tobacco Onions

    Slice Onions

    Peel and slice the onions into thin rings.

    Soak and Coat

    In a bowl, soak the onion rings in buttermilk for at least 30 minutes. In another bowl, mix flour, salt, and black pepper. Dredge the soaked onion rings in the flour mixture.

    Fry Onions

    In a deep skillet, heat vegetable oil over medium heat. Fry the coated onion rings in batches until golden brown and crispy. Remove and drain on paper towels.

Prepare Red Skin Mashed Potatoes

    Boil Potatoes

    Wash and cut the red skin potatoes into quarters. Place in a large pot, cover with water, and add salt. Bring to a boil over high heat, then reduce to a simmer and cook until tender, about 15-20 minutes.

    Mash and Mix

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Plate and Serve

    Assemble the Dish

    On a large plate, place a generous scoop of red skin mashed potatoes, top with the seared beef short rib, and drizzle with BBQ demi-glace. Garnish with fried tobacco onions on top.
