Onion Rings Preparation

Slice the Onions
Peel and slice the large onions into 1/4-inch thick rings. Separate the rings and set aside.

Prepare the Batter
In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, and garlic powder. Gradually add the beer while stirring until the batter is smooth and free of lumps.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off. Carefully place the battered rings into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown and crispy, then remove with a slotted spoon and drain on paper towels.

Mix the Ingredients
In a small bowl, combine the mayonnaise, Dijon mustard, chopped capers, fresh lemon juice, hot sauce, paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Taste and Adjust
Taste the remoulade and adjust the seasoning with additional salt and pepper if necessary. Refrigerate until ready to serve.
