Pasta Preparation

Cook Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta water to help create the sauce later.

Drain Spaghetti
Drain the spaghetti in a colander and set aside.
Sauce Preparation

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Adjust Consistency
If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve
Plate the spaghetti carbonara and garnish with chopped parsley. Serve immediately with additional Parmesan cheese and black pepper if desired.
