Pasta Preparation

    Cook Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta water to help create the sauce later.

    Drain Spaghetti

    Drain the spaghetti in a colander and set aside.

Sauce Preparation

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Ingredients

    Combine Pasta and Pancetta

    Return the skillet with the pancetta to low heat. Add the drained spaghetti to the skillet and toss to coat in the pancetta fat.

    Add Sauce Mixture

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing vigorously to combine. The residual heat will cook the eggs and create a creamy sauce.

    Adjust Consistency

    If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Garnishing

    Serve

    Plate the spaghetti carbonara and garnish with chopped parsley. Serve immediately with additional Parmesan cheese and black pepper if desired.
