Chocolate Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or in the microwave in 30-second intervals until smooth. Set aside to cool slightly.

Egg Mixture

    Separate the Eggs

    Separate the egg yolks and whites. Place the egg yolks in a mixing bowl and the egg whites in a separate, clean bowl.

    Whisk the Egg Yolks

    Add half of the sugar (25g) to the egg yolks and whisk until pale and creamy.

    Combine with Chocolate

    Slowly pour the melted chocolate into the egg yolk mixture and mix until well combined.

    Whip the Egg Whites

    Using an electric mixer, whip the egg whites until soft peaks form. Gradually add the remaining sugar (25g) and continue whipping until stiff peaks form.

Cream Mixture

    Whip the Heavy Cream

    In a separate bowl, whip the heavy cream with the vanilla extract and a pinch of salt until soft peaks form.

Combine and Chill

    Fold Ingredients Together

    Gently fold the whipped cream into the chocolate mixture until no white streaks remain. Next, gently fold in the whipped egg whites.

    Chill the Mousse

    Divide the mousse into serving dishes and refrigerate for at least 2 hours or until set.
