Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add 8 cups of pasta and cook according to package instructions until al dente.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop the bell peppers, zucchini, carrots, cherry tomatoes, and broccoli into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

    Add the Vegetables

    Add the chopped vegetables to the skillet. Season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.

Combining Everything

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the vegetables. Toss to combine. If the mixture seems dry, add a bit of the reserved pasta water until desired consistency is reached.

    Add Cheese and Basil

    Stir in the grated Parmesan cheese and chopped fresh basil. Toss everything together until the cheese is melted and evenly distributed.

    Serve

    Remove from heat and serve hot. Optionally, garnish with additional Parmesan cheese and basil.
