Baked Chicken Casserole

Prepare the Chicken
Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it cool, then cut into bite-sized pieces.

Mix the Casserole Ingredients
In a large mixing bowl, combine the cream of chicken soup, chicken broth, cooked chicken pieces, sautéed vegetables, thyme, salt, and black pepper. Stir until well mixed.

Assemble the Casserole
Pour the chicken mixture into a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly on top, followed by the bread crumbs.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden brown and crispy.

Prepare the Salad
In a large salad bowl, combine the mixed salad greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

Make the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper until well combined.

Dress the Salad
Pour the dressing over the salad just before serving. Toss gently to combine and serve immediately.
