Soup Preparation

    Sauté the Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of diced onion and sauté until translucent, about 5 minutes. Stir in 3 teaspoons of minced garlic and sauté for an additional 1 minute.

    Add Carrots and Tomatoes

    Add 1 cup of diced carrots to the pot and stir for 3-4 minutes. Then, add 2 cups of canned diced tomatoes (with juice) and stir to combine.

    Add Broth and Simmer

    Pour in 2 cups of vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the carrots are tender.

    Blend the Soup

    Using an immersion blender, carefully blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.

    Add Cream and Basil

    Stir in 1 cup of heavy cream and 1 cup of chopped fresh basil. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Heat for another 5-10 minutes, but do not boil.

    Prepare the Bread

    Butter one side of each slice of bread with 1 tablespoon of butter. Place the buttered side down on a cutting board.

    Add Cheese

    Place a slice of cheddar cheese on top of two of the bread slices. Top with the other two slices of bread, buttered side up.

    Grill the Sandwiches

    In a skillet over medium heat, add the sandwiches and grill for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
