Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (163°C).

Prepare the Crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the granulated sugar, sour cream, and vanilla extract, beating until well combined.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and a toothpick inserted comes out clean. The cheesecake may still have a slight jiggle in the center.

Cool and Chill
Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour. Then remove it from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight.

Prepare the Berries
In a bowl, combine the mixed berries, granulated sugar, and lemon juice. Toss gently to coat the berries.

Once the cheesecake is chilled, remove it from the springform pan and top with the prepared berry mixture before serving.
