Preparing the Calamari

    Clean and Soak

    If not pre-cleaned, rinse the calamari rings under cold water. Soak them in buttermilk for at least 30 minutes to tenderize and flavor.

    Prepare the Breading

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Dredge the Calamari

    Remove the calamari from the buttermilk and allow excess to drip off. Dredge each ring in the flour mixture, ensuring they are fully coated.

    Fry the Calamari

    Carefully place the coated calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

    Using a slotted spoon, transfer the fried calamari to a plate lined with paper towels to drain excess oil. Serve immediately.

Making the Spicy Aioli

    In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, minced garlic, and a pinch of salt. Mix until well blended.

    Taste the aioli and adjust the seasoning with more salt or sriracha as desired for added spiciness.
