Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt.

    Add Oil

    Add the oil to the flour mixture and rub it between your palms until it resembles breadcrumbs.

    Add Water

    Gradually add water, a little at a time, mixing until a smooth dough forms. Knead for about 5 minutes until soft and pliable.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

    Cook the Filling

    In a pan, heat a tablespoon of oil over medium heat. Add cumin seeds and let them splutter.

    Sauté Onion and Spices

    Add the chopped onion and sauté until golden brown. Then add ginger, green chili, coriander powder, garam masala, turmeric powder, and salt. Cook for 2-3 minutes.

    Add the mashed potatoes and boiled green peas to the pan. Mix well and cook for another 5 minutes. Remove from heat and let it cool.

Samosa Assembly

    Roll the Dough

    Divide the dough into small balls. Roll each ball into a thin oval shape.

    Cut and Shape

    Cut the rolled dough in half. Take one half, form a cone shape, and seal the edge with a little water.

    Fill the Cone

    Fill the cone with the prepared vegetable filling, then seal the open edge using water.

    Repeat the process with the remaining dough and filling.

Frying

    Heat Oil

    In a deep frying pan, heat the oil over medium heat.

    Fry Samosas

    Carefully drop the samosas into the hot oil. Fry until they are golden brown and crispy, about 5-7 minutes.
