A vegan version of the Irani café special. Spiced scrambled tofu piled up richly alongside plump, home-made vegan buns and grilled tomato.

For the Spiced Scrambled Tofu

    Prepare the Tofu

    Drain the firm tofu and wrap it in a clean kitchen towel. Press it gently to remove excess moisture.

    Cook the Onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Add Tomatoes and Spices

    Add the chopped tomato, turmeric powder, cumin powder, red chili powder, salt, and black pepper. Cook for another 5 minutes until the tomatoes soften.

    Scramble the Tofu

    Crumble the pressed tofu into the skillet. Stir well to mix with the spices and tomatoes, cooking for about 7-10 minutes until heated through. Add chopped coriander leaves before serving.

For the Vegan Buns

    Mix Dry Ingredients

    In a large mixing bowl, combine 3 cups of all-purpose flour, 2 teaspoons of instant yeast, 1 tablespoon of sugar, and 1 teaspoon of salt.

    Add Wet Ingredients

    Gradually add 1 cup of warm water and 2 tablespoons of olive oil to the dry ingredients. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for 1 hour or until doubled in size.

    Shape the Buns

    After the dough has risen, punch it down and divide it into 8 equal portions. Shape each portion into a bun and place them on a baking tray lined with parchment paper.

    Bake the Buns

    Preheat your oven to 375°F (190°C). Let the buns rest for 30 minutes, then bake for 15-20 minutes until golden brown.

For Grilled Tomatoes

    Prep the Tomatoes

    Preheat a grill or grill pan over medium heat. Halve the tomatoes and drizzle them with 1 tablespoon of olive oil and a sprinkle of salt.

    Grill the Tomatoes

    Place the tomatoes cut-side down on the grill. Grill for about 5-7 minutes until they are tender and have grill marks.
